After the harvest, entirely manual, the grapes are taken to the new cantina for the winemaking, the fermen­tation is triggered in a completely natural manner, thanks to the use of native leavens, that is those naturally present in the skins.

The goal is that of making wine with our own grapes, with “local” grape varieties, rather, grape varieties that the environment has chosen and styled in order to transmit the originality, the personality of this place: Umbria.
