VARIETIES: 85% Grechetto, 15% white grapes from the Montefalco area
HARVEST: Hand harvested during the coolest hours of the day
VINIFICATION: Gently pressing of the whole grapes in a controlled environment. Cold static clarification followed by fermentation of the clear must in steel tanks at the temperature of 13-14°.
REFINEMENT: 3/4 months in steel on the fermentation lees
COLOUR: Lemon with typical golden reflections
AROMA: Aroma of yellow peach and apricot with floral hints of hawthorn
TASTE: Medium body and acidity with long finish
PAIRINGS: Thanks to its freshness it is an excellent aperitif, but it also a good pairing with seafood starters, legume soups and medium-structured fish dishes
