"ROFV" is a wine produced exclusively with red grapes typical of the Montefalco area, hand-picked between mid-September and mid-October to ensure the highest quality. The vinification involves a long maceration on the skins and constant temperature control, followed by a complex refinement: 36 months in steel, 12 months in oak and at least 12 months in the bottle. Ruby red in color with garnet reflections, it releases intense aromas of red fruits such as blackcurrant, enriched with notes of pepper, chocolate and undergrowth. On the palate it is full and persistent, with a pleasant tannicity and a delicate bitterish aftertaste. Perfect to pair with noble cured meats, aged cheeses and tasty first courses, it has a potential to refine up to 15 years and should be served at a temperature of 16-18 °C.
